Meet Chef Kenji Tanaka
Executive Chef & Culinary Visionary
With over twenty years of experience honed in the prestigious kitchens of Ginza, Tokyo, and Kyoto, Chef Kenji Tanaka is the heart and soul of Shokuji Express. His philosophy is rooted in "shokunin," the spirit of a craftsman who tirelessly pursues perfection. He believes that the simplest dishes are often the most difficult to master, as they leave no room for error.
Chef Tanaka personally oversees the selection of every ingredient, insisting on a standard of quality that most would reserve for high-end omakase counters. His expertise lies in his ability to balance traditional Edomae-style techniques with a subtle, modern sensibility, creating dishes that are both authentic and exciting. "Food should not only nourish the body but also the spirit," he often says. "Each bento box we send out is a small package of our dedication and care."

Perfectly Seasoned Rice
The foundation of great sushi is the rice, or "shari." We use premium Koshihikari rice, known for its sweet flavor and ideal texture. It's cooked in small batches and seasoned with a proprietary blend of aged red vinegar and sea salt to complement the fish.
